Once a day I drink a coffee which has a spoonful of Manuka Honey stirred into it, it’s delicious and I hope healthy. We are going thru a honey phase at present, here’s another recipe stir some honey into a cup full of boiled rice. Now if you want to do it posh:-

INGREDIENTS

  • 560 g cooked rice
  • 80 g raisins
  • 590 ml milk
  • 120 ml honey
  • 30 g butter
  • 2 g grated lemon rind
  • 15 ml lemon juice
  • 0.3 g ground cinnamon (optional)

DIRECTIONS

  1. Combine rice, raisins, milk, honey, and butter in a saucepan. Bring the mixture to a boil, reduce the heat, and let it simmer for 15 minutes; stirring occasionally. Stir in lemon rind and juice.
